INGREDIENTS

  • 2 c. fresh corn, cut from cob
  • 2 tsp. sugar
  • 1 1/2 tsp. salt
  • 3 eggs, lightly beaten
  • 2 tbsp. butter or margarine
  • 2 c. milk

DIRECTIONS

  • Preheat oven to 350 degrees. Combine the corn, sugar, salt and pepper in a bowl.
  • Add the eggs and mix well. Add the butter to milk in a saucepan and heat until butter is melted. Blend with corn mixture.
  • Turn into a greased 1-quart casserole and place in a pan of hot water. Bake for 1 hour or until a knife inserted in center comes out clean. Garnish with fresh parsley.
