INGREDIENTS

  • 2 pounds Red Snapper (or other fish) fillets, skinned, fresh or frozen
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 cup sliced fresh mushrooms
  • 1/2 cup sliced onion
  • 1/4 cup chopped green pepper
  • 1 cup orange juice
  • 3 tablespoons dry sherry
  • 1 tablespoon grated orange rind
  • 1 tablespoon all-purpose flour
  • Orange and/or lime slices (garnish)

DIRECTIONS

  • Thaw fish if frozen. Preheat oven to 375 degrees. Cut fish into serving-sized portions. Sprinkle with salt and pepper. Place fish in a single layer in a 13 x 9 x 2-inch baking dish.
  • Combine mushrooms, onions and green pepper; spread mushroom mixture over top of fish.
  • Combine remaining ingredients, except orange or lime slices, in a saucepan. Cook over moderate heat, stirring frequently, until mixture thickens and bubbles. Pour sauce over fish and vegetables.
  • Bake at 375 degrees for 20 to 25 minutes or until fish flakes easily when tested with a fork. Garnish with orange and/or lime slices.
