INGREDIENTS

  • 1 lb. cod, haddock, flounder or other white fleshed fish
  • 1 cup House-Autry Seafood Breader Mix
  • 6 tbsp vegetable oil, for pan frying
  • 6 Tbl tartar sauce
  • 1 cup shredded iceberg lettuce
  • 4 hamburger buns
  • 4 tbsp butter, softened, or margarine
  • 1 tbsp granulated garlic (optional)
  • onion, sliced very thin (optional)

DIRECTIONS

  • Divide the fish into 4 4 oz portions. Place the breader mix into a produce plastic bag. Place individual portions of fish into the bag and coat the fish well with the breader. Repeat for the remaining portions. Place each portion onto a plate as they are breaded.
  • Move top rack of oven 6-inch below broiler. Turn broiler to high. Butter tops and bottoms of the hamburger buns. Lightly sprinkle tops and bottoms with granulated garlic. Place buns, cut side up, onto a sheet pan. NOTE: if a griddle is available, disregard the broiler directions and toast butter buns on the griddle. Place a large skillet over medium-high heat. Add the oil to the skillet.
  • As the oil is heating, and just before the oil begins to shimmer, return the individual portions of fish to the plastic bag and coat each piece again with the breader. When the oil begins to shimmer, place the portions of fish into the skillet. Cook for 2 minutes. After two minutes, turn the fish portions over and cook for 3 minutes. Remove the fish to paper lined plate. Place the buns under the broiler. Check after 30 seconds and remove if toasted.
  • Coat the tops and bottoms of the buns with tartar sauce. Place a fish portion onto the bottom of each bun. Place shredded lettuce and onion onto the fish. Top the sandwich and serve.
