INGREDIENTS

  • 1 pound red pimientos (or combination if red and green bell peppers)
  • 1 small onion, sliced into thin rounds
  • 1 tomato, cut in half-slices
  • 3 tablespoons olive oil
  • 2 tablespoons vinegar
  • Salt and pepper to taste

DIRECTIONS

  • Roast the pimientos or bell peppers over an open flame or in a broiler until their skin is blackened. As they are done, put them in a plastic bag to steam. After a few minutes they should peel easily.
  • Cut the stems from the peeled peppers and remove the seeds. Cut into narrow strips and arrange on a serving platter. Top with onion rounds. Surround with the half-slices of tomato.
  • Mix together the oil, vinegar, and salt and pepper; pour mixture over the peppers.
