INGREDIENTS

  • 8 sheets phyllo dough
  • cooking spray
  • 4 cups baby spinach
  • 2 cups halved cherry tomatoes
  • 1 cup sliced mushrooms
  • 1/2 small red onion, very thinly sliced
  • 2 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1 cup shredded part-skim mozzarella cheese
  • Shaved Parmesan cheese (optional)

DIRECTIONS

  • Preheat oven to 450°F. Stack 2 stacks of 2 sheets of phyllo dough on cutting board. Spray with cooking spray.
  • Top each stack with 2 sheets phyllo dough sheets. Spray again with cooking spray. Cut stacks to make 2 (9" x 7") rectangles. Transfer to parchment-lined lg. cookie sheets and bake 5 minutes or until crisp.
  • Meanwhile, toss spinach, tomatoes, mushrooms, red onion, olive oil, and salt in a large bowl.
  • Divide mozzarella cheese and vegetable mixture among the crusts. Bake 3 to 4 minutes or until cheese melts. Top with shaved Parmesan cheese.
