INGREDIENTS

  • 8 medium potatoes
  • 1/2 teaspoon turmeric
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 2 tablespoons vegetable oil
  • 1 tablespoon chopped yellow onion
  • 1/2 teaspoon freshly grated ginger
  • 1/2 teaspoon chopped fresh chili pepper
  • 1/3 cup boiling water
  • 1/2 teaspoon crushed coriander seeds
  • 1/2 teaspoon aniseed
  • 1/2 teaspoon poppy seeds

DIRECTIONS

  • Peel the potatoes and cut each lengthwise in 8 slices. Mix turmeric, salt and garlic powder. Sprinkle this on the potatoes, stir and let stand for about 15 minutes.
  • Heat half the oil and fry the potatoes half soft on low heat. Heat the rest of the oil in another pan and brown the chopped onion, the chili pepper and the ginger. Pour on the boiling water.
  • Add the potatoes and let them absorb the liquid over low heat.
  • Sprinkle on the other seasonings and shake the potatoes in the pan. Taste and correct seasoning with salt if needed.
