INGREDIENTS

  • 1 tablespoon cornstarch
  • 1/2 cup sugar
  • Pinch each salt and ground nutmeg
  • 1/4 cup whipping cream
  • 3/4 cup half-and-half
  • 4 egg yolks
  • 1/4 teaspoon grated lemon rind
  • 1 tablespoon pear brandy or rum

DIRECTIONS

  • In a heavy saucepan mix cornstarch, sugar, salt, and nutmeg. Blend in whipping cream, then half-and-half; cook over medium heat, stirring constantly, until thick.
  • In a small bowl, beat egg yolks with grated lemon rind. Beat in a little of the hot sauce, then return to remaining cream sauce over low heat and stir just until thick (3 to 5 minutes; do not boil). Remove from heat and blend in brandy or rum.
