INGREDIENTS

  • 2 lbs. pork shoulder, cut in strips
  • 1 green pepper, cut in strips
  • half a medium onion, thinly sliced
  • 3/4 cup shredded carrots
  • 2 Tbsp. coarsely chopped sweet pickles
  • 1/4 cup brown sugar, packed
  • 2 Tbsp. cornstarch
  • 1/4 cup water
  • 1 cup pineapple syrup (reserved from pineapple chunks)
  • 1/4 cup cider vinegar
  • 1 Tbsp. soy sauce
  • 2 cups pineapple chunks

DIRECTIONS

  • Place pork strips in slow cooker. Add green pepper, onion, carrots, and pickles.
  • In bowl, mix together brown sugar and cornstarch. Add water, pineapple syrup, vinegar, and soy sauce. Stir until smooth.
  • Pour over ingredients in slow cooker.
  • Cover. Cook on Low 5-7 hours. One hour before serving, add pineapple chunks. Stir. Serving suggestion: Serve over buttered noodles with an additional dash of vinegar or garlic to taste.
