INGREDIENTS

  • 4 skinless catfish fillets (1 1/2 to 2 pounds), rinsed in water and patted dry
  • 1 cup buttermilk
  • 1/2 cup yellow cornmeal
  • 4 tablespoons allpurpose flour
  • 1 tablespoon Cajun seasoning
  • Canola oil, for frying
  • Salt

DIRECTIONS

  • Soak catfish in buttermilk for 15 minutes. In a shallow bowl, combine cornmeal, flour and Cajun seasoning.
  • Heat a 10-inch cast-iron skillet over medium heat for about 4 minutes, or until hot but not smoking. Pour in canola oil to a depth of 1/4 inch and heat it until a sprinkle of cornmeal causes it to sizzle. (If the oil starts to smoke, turn down the heat and let it cool a bit.)
  • Remove the catfish fillets from the buttermilk. Dip the fillets in the cornmeal mixture, coating them completely and making sure the breading adheres. Season with salt.
  • Fry the catfish in the hot oil until golden brown, about 3 minutes. Turn the fillets over and cook for another 2 to 3 minutes. Remove from pan and drain on paper towels. Serves 4.
