INGREDIENTS

  • 2 Tbl vegetable or olive oil
  • 1/2 large onion, diced
  • 3/4 cup bell pepper, chopped
  • 1/8 tsp each salt and black pepper
  • 3 cloves garlic, minced
  • 4 cans 15 oz. each pork and beans
  • 3/4 cup barbecue sauce
  • 1 Tbl. Creole Mustard
  • 1 Tbl cider vinegar
  • 1 tsp chili powder
  • 1/2 tsp Creole seasoning
  • 1 Tbl molasses

DIRECTIONS

  • Place the oil in a heavy bottomed pot over medium heat. Once the oil begins to shimmer, add the onion and the bell pepper. Stir. Cook stirring occasionally until the onion and pepper are tender. Sprinkle with salt and black pepper.
  • Add the garlic and stir. Cook for about 1 minute, stirring occasionally. Drain the liquid from the cans of beans down to the beans. Add the beans to the pot and stir well.
  • Add the BBQ sauce and stir to spread the sauce throughout the mixture. Repeat the same with the remaining ingredients.
  • Turn the beans to simmer and cook until the mixture of the consistency you would like, not to soupy, not too dry. Enjoy!!
