INGREDIENTS

  • Giblets from 2 broilers
  • Necks and backbones from 2 broilers
  • 4 cups water
  • 6 tablespoons non-fat dry milk
  • 1/2 teaspoon Ac'cent
  • 1 teaspoon salt
  • Few grains pepper
  • 1/2 teaspoon poultry seasoning
  • 1/2 cup butter or margarine
  • 1/2 cup flour

DIRECTIONS

  • Simmer giblets, necks, and backbones of broilers in 2 cups of the water 20 to 30 minutes. Discard bones. Chop giblets.
  • Measure liquid, adding enough more water to make 2 cups.
  • Sprinkle non-fat dry milk on remaining 2 cups water; beat with rotary egg beater until dissolved; add to giblet broth with Ac'cent, salt, pepper, and poultry seasoning.
  • Melt butter or margarine; blend in flour; add broth mixture; stir over low heat until smooth and thickened. Add chopped giblets. Cook over hot water 10 minutes. Serve with fried chicken halves.
