INGREDIENTS

  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 1/3 cup chopped celery
  • 1 can (16 ounces) tomatoes (undrained)
  • 1 can (12 ounces) whole kernel corn, drained
  • 1 can (8 ounces) tomato sauce
  • 1 Tbl. chili powder
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 cup cornmeal
  • 1 egg, beaten
  • 1/2 cup milk
  • 2 Tbl. vegetable oil

DIRECTIONS

  • Brown ground beef, onion, and celery in a skillet; drain off excess fat. Add tomatoes, corn, tomato sauce, chili powder, 1 teaspoon salt and the pepper; simmer 10 minutes.
  • Sift together flour, baking powder, and add 1/2 teaspoon salt into a bowl. Mix in cornmeal. Stir in egg, milk and oil. Mix only until dry ingredients are moistened.
  • Spoon hot meat mixture into a 2 quart casserole. Top with cornbread topping, spreading topping to cover all.
  • Bake, uncovered, at 425°F for 25 minutes or until cornbread is golden brown. 6 Servings
