INGREDIENTS

  • 18 oz chuck roast
  • 18 oz sirloin steak
  • 6 oz garlic croutons
  • 1/2 tsp each cayenne and black pepper
  • 1 tsp chili powder
  • 1 tsp thyme, dried
  • 1/2 onion, roughly chopped
  • 1 carrot, peeled and broken
  • 3 cloves garlic
  • 1/2 red bell pepper, chopped
  • 1 1/2 tsp salt
  • 1 egg, beaten
  • For Glaze:
  • <1/2 cup ketchup
  • 1/4 cup tomato paste
  • 1 tbsp dark brown sugar, packed
  • 1 tsp garlic powder
  • 1 tbsp cocoa powder
  • 2 chipotle peppers, finely chopped
  • 1 tbsp chipotle sauce, from the can

DIRECTIONS

  • Into the bowl of a food processor, place the garlic croutons, black pepper, cayenne pepper, chili powder and thyme. Process until croutons are no longer recognizable; pour into large mixing bowl. Preheat oven to 325°F.
  • Into the processor bowl, place the onion, garlic cloves, carrot and bell pepper. Pulse to heavily process but do not puree. Pour into bowl with croutons and mix well. Process chuck and sirloin 10 pulses. Pour on top of crouton/veg mixture. Sprinkle all with 1 1/2 tsp salt. Add one egg beaten. Using hands, mix all well but do not squeeze or mash mixture.
  • Line a baking sheet with parchment paper. Loosely pack mixture into a loaf pan. Press to fill the corners. Turn the mixture out onto the center of the parchment paper. Insert probe thermometer into the mixture. Place into oven. Cook until internal temperature reaches 155°F.
  • When the meatloaf reaches 130°F, combine the glaze ingredients and cover the meatloaf with glaze.
