INGREDIENTS

  • 1 pound cooked, peeled, deveined rock shrimp
  • 3 cups cooked, drained noodles (include colorful noodles such as spinach or tomato)
  • 1 cup diagonally sliced celery
  • Summer Salad Dressing (search recipes)
  • Bibb lettuce
  • Tomatoes and avocado (garnish)

DIRECTIONS

  • In medium-sized bowl, combine shrimp, celery and noodles.
  • Toss with 1/4 cup of dressing.
  • Serve on a bed of bibb lettuce.
  • Garnish with tomato and avocado slices. Serve with remaining dressing.
