INGREDIENTS

  • 12 oz. by weight granulated white sugar
  • 3 egg whites
  • 1/2 tsp. cream of tartar
  • 1/4 tsp. kosher salt
  • 1/3 cup coconut water
  • 1/2 tsp. vanilla extract
  • 1 tsp. coconut extract

DIRECTIONS

  • Bring two quarts of water in large post to a boil; reduce to simmer.
  • In large bowl which will fit over simmering water pot, place sugar, egg whites, cream of tartar, kosher salt and coconut water.
  • Set bowl of sugar mixture over simmering water and mix, on low speed, for 1 minute. After 1 minute, increase speed to high and keep it there for 5 minutes - remove from heat.
  • Add vanilla and coconut extract and beat for 1 minute. Set aside for 5 minutes before frosting cake. (Cake layers which have been split in-half should not be placed cut sides together. Cut sides will take more frosting.) Place 1/2 cup frosting on each cake layer. Sprinkle each layer with shredded coconut if desired or mix coconut into frosting.
