INGREDIENTS

  • 3/4 cup unsweetened cocoa powder
  • 3/4 cup boiling water
  • 1/2 cup vegetable shortening or butter
  • 2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 1 cup buttermilk
  • 2 cups sifted cake flour
  • 2 cups Chocolate Buttercream Icing (search recipes)

DIRECTIONS

  • Preheat oven to 350° F. Butter and lightly flour two 8- by 2-inch round cake pans; line bottom of each with a circle of waxed paper. Stir cocoa into boiling water until smooth; set aside.
  • In large bowl of electric mixer, Cream shortening and sugar together until light and fluffy. Add eggs, one at a time, beating after each addition. Beat in vanilla and salt.
  • Stir baking soda into buttermilk. Add 1/2 cup of the flour to egg mixture; then add 1/3 cup buttermilk mixture. Continue to add flour and buttermilk alternately, beating well after each addition. Stir in cocoa mixture.
  • Divide the batter evenly between the two cake pans. Bake until done (30 to 35 minutes). Cool in pans 5 minutes, then turn out on wire racks to finish cooling. Ice and decorate with Chocolate Buttercream Icing.
