INGREDIENTS

  • 1 1/2 cups Chicken Broth, Bouillon or Consomme
  • 4 teaspoons Thick-It-Up
  • 2 medium (4-1/8" long) Scallions or Spring Onions
  • 4 teaspoons Sesame Oil
  • 1 1/2 teaspoons Garlic
  • 4 teaspoons Ginger
  • 2 tablespoons Sodium and Sugar Free Rice Vinegar
  • 2 tablespoons Tamari Soybean Sauce
  • 2 teaspoons Sucralose Based Sweetener (Sugar Substitute)
  • 2 pounds Channel Catfish (Farmed)

DIRECTIONS

  • Heat broiler. Mix broth and thickener in a small bowl; stir until thickener dissolves.
  • Heat oil in a medium saucepan over medium heat. Mince the garlic and ginger, add them to the pan and stir-fry for 30 seconds. Add rice wine vinegar, soy sauce, sugar substitute and broth mixture.
  • Bring to a boil. Cook, stirring constantly, 1 minute. Remove from heat. Brush fillets with sauce. Broil 3 minutes per side. Cut scallions into 1/4 inch pieces at the bias.
  • Transfer to plates; top with remaining sauce. Garnish with green onions.
