INGREDIENTS

  • 1 broiler-fryer chicken (2 to 2 1/2 pounds), cut up
  • 2 tablespoons oil
  • 2 medium onions, chopped
  • 1 garlic clove, minced
  • 1 cup uncooked rice (not instant)
  • 1/2 green pepper, chopped
  • 8 ounces tomato sauce
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can or bottle (12 ounces) beer
  • 2 bay leaves

DIRECTIONS

  • Brown chicken in oil in a large skillet; set chicken aside. In same skillet, saute onion and garlic until golden.
  • Stir in rice, green peppers, tomato sauce, 1 teaspoon salt, pepper and beer. Stir well to stir up brown bits in skillet. Put mixture in a large, shallow baking dish. Add bay leaves.
  • Sprinkle chicken with 1/2 teaspoon salt; place on top of rice mixture. Cover tightly with foil or lid.
  • Bake at 375°F 40 to 60 minutes, or until chicken and rice are tender.
