INGREDIENTS

  • 2 tbsp olive oil
  • 3 tbsp fresh lime juice
  • 1 tsp hot paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/4 tsp salt
  • 3 1/2 cups shredded rotisserie chicken
  • 1/8 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/4 small pineapple (cored and cut into 1/2 in. pieces)
  • 1/2 small red onion (thinly sliced)
  • 1/4 cup small fresh cilantro leaves
  • 8 tostadas

DIRECTIONS

  • In a medium bowl, whisk together olive oil and 1 tbsp fresh lime juice. Stir in hot paprika, cumin, chili powder and 1/4 tsp salt.
  • Add chicken and toss to combine.
  • In a medium bowl, whisk together 2 tbsp fresh lime juice, cayenne pepper and 1/4 tsp salt.
  • Add pineapple and red onion. Toss to combine. Fold in cilantro leaves. Top tostadas with the chili chicken and the pineapple and red onion relish.
