INGREDIENTS

  • 2 whole chicken breasts (about 1 lb.)
  • 2 Tbl. vegetable oil
  • 1/2 lb. mushrooms, cleaned and chopped
  • 1 can (16 ounces) stewed tomatoes
  • 1 medium clove garlic, crushed in a garlic press
  • 1 tsp. oregano, dried
  • 1/2 tsp. thyme, dried
  • 1 can (8 ounces) tomato sauce
  • 1/3 Parmesan cheese
  • Salt and Pepper
  • 6 dinner crêpes

DIRECTIONS

  • Bone chicken and cut into 1-inch strips.
  • Heat oil, sauté chicken and mushrooms until chicken turns white. Stir in stewed tomatoes, garlic, oregano, thyme, tomato sauce, and 3 tablespoons grated cheese. Add salt and pepper to taste. Simmer uncovered 5 minutes.
  • Using a slotted spoon, spoon onto crépes. Roll crépes cigar style and place into shallow baking dish. Sprinkle tops of crépes with remaining cheese and any remaining sauce.
  • Bake at 375°F until cheese browns (about 15 minutes). 6 Filled Crépes
