INGREDIENTS

  • 1 large chicken breast, 8oz or so
  • 1 egg, lightly beaten
  • 1/2 cup flour
  • Salt and pepper, to taste
  • 1 Tbl. Dijon mustard
  • 1/2 cup milk
  • 1/2 cup Parmesan or Romano cheese, grated
  • Oil for cooking

DIRECTIONS

  • Will need two skinless, boneless chicken breast. Either two about 4oz each or one large one about 8oz. If one large breast is used, place breast flat on a cutting board and make one level horizontal cut, through, and down the entire length of the breast, creating two equal sized breast meats.
  • Put the flour in a paper or plastic bag. Place the egg, salt and pepper, Dijon mustard, milk and cheese in a bowl and mix well.
  • In a large skillet over medium heat, pour enough oil, either olive or vegetable or a combination thereof, to cover the bottom of the skillet about 1/8 inch deep. Heat the oil until the oil begins to shimmer.
  • Place both breasts into the bag of flour and thoroughly coat the breast with flour. Place each breast into the egg mixture to coat the entire breast well. Carefully place the breasts into the hot oil. Cook until the bottom of the breast is golden brown, flip over to cook the other side. Once the second side is golden, flip over again and check the breast with a thermometer to confirm a temperature of at least 170°F. Serve and Enjoy!!!
