INGREDIENTS

  • 3 pounds chicken pieces
  • 2 to 3 tablespoons flour, seasoned with salt and pepper
  • 6 tablespoons butter
  • 1 pound frozen Spinach
  • 1 tablespoon flour
  • 3 to 4 tablespoons light cream
  • 1/8 teaspoon paprika
  • 4 to 5 tablespoons grated Parmesan cheese
  • 3 tablespoons cornflake or bread crumbs

DIRECTIONS

  • Roll chicken pieces in seasoned flour. Melt 3 tablespoons butter in large frying pan. Add chicken pieces and cook until browned, about 10 minutes.
  • Preheat oven to 400 degrees. Cook frozen spinach following directions on package. Add 2 tablespoons butter and toss until melted. Sprinkle in flour. Bring spinach to a boil, then add cream and paprika. Spoon spinach mixture into buttered, ovenproof dish. Arrange chicken pieces on top.
  • Mix cheese and cornflake or bread crumbs together. Sprinkle thickly on top of chicken. Melt remaining butter and dribble on top. Bake for 25 to 30 minutes, or until topping is crisp and brown.
