INGREDIENTS

  • 2 tablespoons butter or margarine
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup dry white wine, such as sauterne
  • 1/2 cup grated pasteurized process Swiss cheese
  • Dash each white pepper and nutmeg
  • 1 tablespoon chopped pimento (optional)

DIRECTIONS

  • Melt butter and blend in flour and salt.
  • Add milk, stirring until smooth; cook and stir until sauce boils and is thickened.
  • Add wine, cheese, pepper, nutmeg, and pimento, if desired. Stir over low heat until cheese is melted.
  • Spoon hot sauce over cooked broccoli.
