INGREDIENTS

  • 1 cup milk
  • 1/4 cup butter or margarine
  • 1/2 teaspoon salt
  • Pinch each ground nutmeg and cayenne pepper
  • 1 cup flour
  • 4 eggs
  • 1 cup shredded Gruyere or Swiss cheese

DIRECTIONS

  • Preheat oven to 375° F. In a 2-quart saucepan combine milk and butter. Place over medium heat and cook, stirring occasionally, until butter melts.
  • Add salt, nutmeg, and cayenne. Add flour all at once, stirring until mixture leaves sides of pan and forms a ball (about 2 minutes). Remove pan from heat.
  • Beat in eggs, one at a time, beating after each addition until mixture is smooth and glossy. Stir in 3/4 cup of the cheese.
  • Spoon out dough to make eight equal mounds, slightly apart, in the shape of a ring on a greased baking sheet. Sprinkle with remaining 1/4 cup cheese.
  • Bake until puffs are well browned and crisp (40 to 45 minutes). Serve hot.
