INGREDIENTS

  • 2 T olive oil
  • 2 T unsalted butter
  • 2 lb. yellow onions, sliced in 1/2 rings
  • 1/2 t fresh thyme leaves
  • 2 T sherry wine vinegar
  • 1 t Kosher salt
  • 1/2 t ground black pepper

DIRECTIONS

  • Heat olive oil and butter in a large shallow pot. Add onions and thyme and toss in oil. Place lid on pot and cook over med-low heat for 10" to sweat the onions.
  • Remove lid and cook for 25-30 minutes, stirring occasionally until onions are caramelized and golden brown. Add vinegar, salt and pepper for 2 minutes, scraping brown bits from pot.
