INGREDIENTS

  • 1 lb. shrimp, peeled and deveined
  • 2 cups cracker meal
  • 1/4 cup Old Bay® Seasoning
  • Oil for frying

DIRECTIONS

  • Hint: Shrimp that have been peeled and deveined are butterflied by carefully running a small sharp knife from the head of the shrimp, to the tail of the shrimp, cutting along the devein line and cutting deeply but not all the way through the shrimp.
  • Combine the cracker meal and the Old Bay® Seasoning and mix well. Pour the meal mixture into a wide, long and shallow container. NOTE: The cracker meal mixture will last forever if kept in an air-tight container in a cool location.
  • Place a large pot with enough cooking oil to fry shrimp, without crowding, on medium-high heat. Using a thermometer, heat the oil until a temperature of 350°F, but no higher is reached.
  • Note: Shrimp Cook Quickly. Prepare A Serving Platter Before Placing Shrimp Into Oil. Have Slotted Spoon Ready To Remove Shrimp From Pot. Place butterflied shrimp onto meal mixture and gently press shrimp into mixture. Turn shrimp over and repeat. Gently dust shrimp with mixture to ensure total coverage. Once all shrimp are breaded, with both hands pick up two shrimp at a time and gently lay into hot oil. Quickly repeat with remaining shrimp. Gently stir shrimp to prevent sticking together. Cook for 2 minutes and quickly remove from pot and place on serving platter.
