INGREDIENTS

  • 1/4 cup butter, softened
  • 1/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup milk
  • Oil for frying
  • For Cinnamon Sugar:
  • 3/4 cup sugar
  • 1 tablespoon ground cinnamon

DIRECTIONS

  • In medium bowl of electric mixer, cream butter and sugar together until blended. Add eggs and beat well. Stir in vanilla. Stir and toss 1 cup of the flour with baking powder and salt. Add to first mixture and mix until blended. Beat in milk.
  • Add the remaining flour and mix to make a soft dough. Turn onto a floured surface and knead a minute or two, until dough is perfectly smooth, kneading in a little more flour if necessary to keep it from being too sticky.
  • Roll dough until it is about 1/4 inch thick, flouring it lightly if it sticks. Cut into 3-inch rounds. In a frying kettle, heat about 2 inches of oil to 360° F.
  • Fry about 6 bunuelos at a time, turning them often, for about 1 1/2 to 2 minutes, until they look like puffy, golden pillows. Drain on paper towels and toss in Cinnamon Sugar while still warm.
  • FOR JELLY BUNUELOS: Fill a pastry bag, fitted with a round tip, with about 2 cups jelly or thick jam. After buniielos have cooled, use a knife point to make a small slit in the side of each bufiuelo. Insert tip of bag and pipe in a generous tablespoon of jam or jelly.
