INGREDIENTS

  • 4 4-ounce fresh or frozen tuna steaks, cut 1/2 to 1 inch thick
  • 2 teaspoons olive oil
  • 2 teaspoons lemon juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 teaspoons snipped fresh rosemary or tarragon or 1 teaspoon dried rosemary or tarragon, crushed
  • 2 cloves garlic, minced
  • 1 tablespoon capers, rinsed and drained

DIRECTIONS

  • Thaw fish if frozen. Preheat broiler. Rinse fish; pat dry with paper towels. Measure thickness of fish. Brush fish with oil and lemon juice; sprinkle with salt and pepper. Sprinkle rosemary and garlic on fish; rub in with your fingers.
  • Place fish on the greased rack of an unheated broiler pan. Broil 4 inches from heat for 4 to 6 minutes per 1/2-inch thickness of fish or until fish flakes easily when tested with a fork, turning once if fish is 1 inch thick or more. To serve, top fish with capers.
