INGREDIENTS

  • 4 pounds fresh brisket of beef
  • Salted water
  • 3 or 4 whole black peppers
  • 1 bay leaf
  • 1 onion
  • 1 stalk celery
  • 1 tablespoon butter or margarine
  • 1 tablespoon flour
  • 1 cup milk
  • 1 tablespoon lemon juice
  • 1/2 cup prepared horseradish
  • Salt and pepper

DIRECTIONS

  • Place brisket in kettle with salted water to cover. Add whole black peppers, bay leaf, onion, and celery. Cover and simmer until meat is tender, about 3 hours.
  • If desired, cook potatoes in the stock.
  • To make sauce, blend flour into melted butter over low heat. Add milk gradually, stirring constantly, until smooth and thickened. Season sauce with salt, pepper, lemon juice and horseradish.
