INGREDIENTS

  • 3 Tbl olive oil
  • 13 cloves garlic, minced
  • 2 Tbl. granulated garlic
  • 4 1/4 tsp. kosher salt
  • 4 1/4 tsp. black pepper
  • 1 Whole chicken, cut up, skin removed
  • 4 Egg whites, lightly beaten
  • 2 Cups all-purpose flour
  • 7 Tbl. unsalted butter
  • 2 Tbl. fresh parsley, minced
  • Oil for frying chicken

DIRECTIONS

  • Make marinade with 3 Tbl. olive oil, 5 cloves garlic, minced, 1 Tbl. granulated garlic, 2 tsp. kosher salt and 2 tsp. black pepper. Pour over chicken pieces and toss to coat well. Marinate for up to 24 hours in refrigerator.
  • Separate egg whites from yolks and lightly beat. Set aside. Combine flour, 1 Tbl. granulated garlic, 2 tsp. kosher salt and 2 tsp. black pepper. Remove chicken from marinade, pat dry, and remove any large pieces of garlic from chicken.
  • Dip each piece of chicken in egg white and then place into flour mixture. Cover chicken with mixture - pressing the mixture onto the chicken to coat well. Place chicken on a wire rack to rest for at least 30 minutes. Put cooking oil in large pot and heat over medium-high heat to between 300° and 325°F. Maintain temperature while cooking chicken. Cook chicken for about 15 minutes or breast at 160°F, legs and thighs at 170°F.
  • For Sauce: Place 7 Tbl. butter into bowl along with parsley, 1/4 tsp. salt and 1/4 tsp. black pepper. Using a fork, mix as well as possible. Put 1 Tbl. butter into sauce pan on medium heat and add 8 cloves garlic, minced, and 1 tsp. water. Saute garlic until very tender. Pour hot mixture into butter parsley mix and mix well to create garlic sauce. Serve sauce over chicken.
