INGREDIENTS

  • 2 pounds flounder (or other fish) fillets, fresh or frozen
  • 6 slices (6 ounces) cooked ham
  • 6 slices (6 ounces) Swiss cheese
  • 1 teaspoon grated orange rind
  • 1/4 teaspoon white pepper
  • 1 egg, beaten
  • 1 cup bread crumbs
  • 1 tablespoon butter or margarine
  • 1 tablespoon all-purpose flour
  • 1 cup light cream or half-and-half
  • 1/4 cup Parmesan cheese

DIRECTIONS

  • Thaw fillets if frozen. Place 1 slice each of ham and cheese in the center of each fillet. Cut to fit. Sprinkle with grated orange rind and white pepper. Roll into pinwheels and secure with wooden toothpicks.
  • Gently dip roll in beaten egg; coat with bread crumbs. Place in a greased 12 x 8 x 2-inch baking dish.
  • In saucepan, over medium heat, combine butter and flour. Slowly stir in cream; heat until sauce begins to thicken. Pour sauce over fish roll-ups. Sprinkle with Parmesan cheese.
  • Bake at 350 degrees for 20 to 25 minutes or until fish flakes easily when tested with a fork.
