INGREDIENTS

  • 2 4 oz. portions Cod fish
  • 2 Tbl. butter, melted
  • 1 tsp. ground basil
  • 1/8 tsp. ground thyme
  • 1 clove garlic, minced
  • 1/8 tsp. salt
  • 1/8 tsp. ground black pepper

DIRECTIONS

  • Preheat oven to 350°F. Combine all ingredients, except fish, and stir to mix well.
  • Spray a baking sheet with cooking spray or place parchment paper on baking sheet. Place fish on baking sheet. Using something such as a pastry brush, brush both sides of the fish with the butter mixture.
  • Place fish on the middle rack of the oven. Bake for 8 minutes. Carefully turn fish over.
  • Bake fish for another 4 minutes. Watch fish carefully during this cooking time. Once fish begins to flake, remove the fish from the oven and serve.
