INGREDIENTS

  • 2 tbsp olive oil
  • 2 oz. diced streaky (fatty) bacon slices, preferably dry-cured, diced
  • 1 eating apple, cored and chopped
  • 2 small heads cos or romaine lettuce
  • a squeeze of lemon juice
  • salt and ground black pepper
  • For the dressing:
  • 2/3 cup sour cream
  • 1 tbsp cider
  • 2 oz. Camembert or similar cheese, chopped
  • a dash of cider vinegar

DIRECTIONS

  • Heat 1 tbsp of the olive oil in a large frying pan and add the diced streaky bacon. Cook over a medium heat until crisp and golden. Add the apple and cook gently for 1-2 minutes until golden brown and softened.
  • Tear the cos or romaine lettuce carefully into bite-size pieces.
  • To make the dressing, heat the ingredients together in a small pan over a low heat until smooth and creamy.
  • Toss the lettuce with the remaining oil and the lemon juice, season, then divide among four plates. Heap the warm apple and bacon on top, then drizzle over the dressing.
  • Variation: For a slightly tangier topping, replace the Camembert with a mild and creamy blue cheese, such as Cambozola.
