INGREDIENTS

  • 3 tablespoons oil
  • 1 cup long-grain rice
  • 1/2 onion, chopped
  • 1 clove garlic, minced
  • 1 cup mild green chile salsa
  • 2 cups chicken broth
  • Fresh cilantro, for garnish (optional)

DIRECTIONS

  • Heat the oil in a skillet. Add rice and cook over medium heat stirring constantly, until puffed and golden.
  • Push the rice to one side, add onion and garlic, and cook until onion is soft. Add salsa and cook briefly, stirring to mix rice with onion/salsa mixture.
  • Add chicken broth and bring to a boil. Reduce heat, cover, and simmer until all liquid has been absorbed (about 30 to 35 minutes). Garnish with cilantro, if desired.
