INGREDIENTS

  • 2 large fryers, disjointed
  • 1/4 c. olive oil
  • 1/4 c. butter
  • 2 c. rice
  • 1 sm. onion, minced
  • 1 clove of garlic, minced
  • 1 No.2 can tomatoes

DIRECTIONS

  • Cook the chickens in boiling water until tender. Drain and reserve stock.
  • Heat the oil and butter in a skillet. Brown the chicken in oil mixture and drain on paper towels. Brown the rice, onion and garlic in same skillet and add tomatoes. Place rice mixture in a deep casserole and cover with chicken. Skim the fat from the chicken stock and pour enough stock into the casserole to cover rice mixture. Cover the casserole.
  • Bake in a 350-degree oven for about 1 hour, adding stock, if needed.
  • Garnish with parsley and pimento strips.
