INGREDIENTS

  • 2 tablespoons cooking oil
  • 1 small clove garlic, minced
  • 4 medium zucchini, thinly sliced
  • 1/3 cup coarsely chopped onion
  • 1 tablespoon chopped parsley
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon oregano
  • 1/4 teaspoon rosemary
  • 2 cups chopped peeled tomatoes
  • 1/4 cup grated Parmesan cheese (optional)

DIRECTIONS

  • Heat oil in a large wok or skillet. Add garlic and stir-fry about 1 minute. Stir in zucchini, onion, and parsley. Sprinkle with a mixture of salt, pepper, oregano, and rosemary. Stir together and cover.
  • Heat about 5 minutes over medium heat. Stir in tomatoes and cook, uncovered, 1 to 2 minutes, or until tomatoes are thoroughly heated.
  • Turn mixture into a serving dish and sprinkle with cheese.
