Warm Salad of Ham and New Potatoes Recipe makes a salad of new potatoes, green beans, spinach, spring onions, hard-boiled eggs, lemon juice and cooked ham served with dressing of olive oil, turmeric and cumin in this delicious salad recipe.

INGREDIENTS

  • 8 oz. new potatoes, halved if large
  • 2 oz. green beans
  • 4 oz. baby spinach leaves
  • 2 spring onions (scallions), sliced
  • 4 eggs, hard-boiled and quartered
  • 2 oz. cooked ham, cut into strips
  • juice of 1/2 lemon
  • salt and ground black pepper
  • For the dressing:
  • 4 tbsp olive oil
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1/3 cup shelled hazelnuts

DIRECTIONS

  • Cook the potatoes in boiling salted water for 10-15 minutes, or until tender. Meanwhile, cook the beans in boiling salted water for 2 minutes.
  • Drain the potatoes and beans. Toss with the spinach and spring onions.
  • Arrange the hard-boiled egg quarters on the salad and sprinkle the strips of ham over the top. Drizzle with the lemon juice and season with plenty of salt and pepper.
  • Heat the dressing ingredients in a large frying pan and continue to cook, stirring frequently, until the nuts turn golden. Pour the hot, nutty dressing over the salad and serve immediately.
