INGREDIENTS

  • 5 med. yams
  • 3/4 c. (firmly packed) light brown sugar
  • 3 med. tart cooking apples
  • 2 tbsp. butter
  • Nutmeg to taste
  • 1 lb. ground cooked ham
  • 1 lb. ground beef round
  • 1 lb. ground veal shoulder
  • 1 c. soft bread crumbs
  • 1 med. onion, finely chopped
  • 2 tbsp. finely chopped green pepper
  • 2 tbsp. parsley
  • 1/2 tsp. sage
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 egg, slightly beaten
  • 3/4 c. apple juice

DIRECTIONS

  • Cook the yams, covered, in boiling, salted water for 15 to 20 minutes, then drain.
  • Peel and slice 1/2 inch thick. Sprinkle the brown sugar over bottom of a lightly greased 9 x 13 inch pan.
  • Peel and core the apples, then slice 1/2 inch thick. Place the yam slices on brown sugar and place apple slices on yam slices. Dot with butter and sprinkle with nutmeg.
  • Mix the ground meats, bread crumbs, onion, green pepper, parsley, seasonings, egg and apple juice and press on top of apples.
  • Bake in 350-degree oven for 1 hour. Pour off drippings carefully and reserve. Place a platter on top of baking dish and invert so loaf rests, yam side up, on platter. Lift off baking dish. Spoon some of the reserved drippings over top. Serve remaining drippings as gravy with ham loaf.
