INGREDIENTS

  • 1/2 package active dry yeast
  • 1 cup plus 2 tablespoons warm water
  • 4 cups sifted all-purpose flour
  • 1 teaspoon salt
  • 3 cups drained canned tomatoes
  • 8 ounces mozzarella cheese, thinly sliced
  • 1/2 cup olive oil
  • 4 cups grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons oregano

DIRECTIONS

  • Soften yeast in 2 tablespoons warm water. Set aside. Pour remaining cup of warm water into a large bowl. Blend in 2 cups flour and 1 teaspoon salt. Stir softened yeast and add to flour-water mixture, mixing well. Add about 1 cup flour to yeast mixture and beat until very smooth. Mix in enough remaining flour to make a soft dough. Turn dough onto a lightly floured surface and allow to rest 5 to 10 minutes. Knead 5 to 10 minutes, until dough is smooth and elastic.
  • Shape dough into a smooth ball and place in a greased bowl just large enough to allow dough to double. Turn dough to bring greased surface to top. Cover with waxed paper and let stand in warm place (about 80°) until dough is doubled' (about 1 1/2 to 2 hours). Punch down with fist. Fold edge towards center and turn dough over. Divide dough into two equal balls. Grease another bowl and place one of the balls in it. Turn dough in both bowls so greased side is on top.
  • Cover and let rise again until almost doubled (about 45 minutes). Roll each ball of dough into a 14x10-inch rectangle, 1/8 inch thick. Force tomatoes through a sieve or food mill and spread 1 1/2 cups on each pizza. Arrange 4 ounces of mozzarella cheese on each pizza. Sprinkle over each pizza, in the order given, 1/4 cup olive oil, 2 tablespoons grated Parmesan cheese, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1 teaspoon oregano.
  • Bake at 400°F 25 to 30 minutes, or until crust is browned. Cut into wedges to serve.
