INGREDIENTS

  • 1 1/4 cups sugar
  • 1/2 cup butter or margarine, softened
  • 2 eggs
  • 1 1/2 cups mashed very ripe bananas (3 or 4)
  • 1/2 cup buttermilk
  • 1 tsp. vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 cup chopped nuts (optional)

DIRECTIONS

  • Heat over to 350°F. Grease bottoms only of 2 8-in. x 4-in. loaf pans or 1 9-in. x 5-in. loaf pan.
  • Place ripe bananas in bottom of a large bowl and mash thoroughly with tines of fork. Add sugar and butter and mix all well. Add eggs, buttermilk and vanilla; beat with electric mixer on medium speed until smooth. Stir in flour, baking soda, salt and nuts just until moistened. Pour batter into pans.
  • Bake 8-in. loaves for 1 hour, 9-in. loaf for 1 1/4 hour, or until toothpick inserted into center comes out clean.
  • Cool 10 minutes. Loosen sides of loaves from pans. Remove from pans to cooling rack. Cool about 1 hour before slicing.
