INGREDIENTS

  • 1 lb. shrimp, peeled and deveined
  • 2 Tbl. coconut or vegetable oil
  • 2 cloves garlic, minced
  • 1 red pepper, sliced
  • 3 Tbl. green onion, chopped
  • 2 Tbl. green curry paste
  • 1 Tbl. fish sauce
  • 2 Tbl. coconut sugar
  • 1 15 oz. can coconut milk
  • 10 fresh basil leaves, torn
  • Salt to taste
  • 1 lime, sliced for garnish
  • Grits or rice

DIRECTIONS

  • In a large skillet, heat the oil over medium low heat. Add the garlic and sauté for 1-2 minutes. Add the sliced red pepper and the chopped green onion and sauté for 2 minutes.
  • Add the curry paste and fry for about 30 seconds, stirring constantly. Add the coconut sugar and coconut milk and stir to mix well. Simmer for 5 minutes.
  • Add the shrimp to the coconut milk mixture and stir. Remove from heat, set aside covered for 10 minutes.
  • Add the torn basil leaves to the dish and gently stir. Serve over grits. Rice may be substituted.
