INGREDIENTS

  • 8 pounds country-style pork riblets
  • SAUCE:
  • 3 cloves garlic, chopped
  • 2 small hot dried red chiles
  • 1 tablespoon chopped cilantro (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/4 cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 cups chili sauce
  • 2 cups tomato catsup
  • 2 cups white vinegar
  • Few drops hot-pepper sauce

DIRECTIONS

  • Preheat oven to 325° F. TO PREPARE THE SAUCE: Combine garlic, chiles, cilantro (if used), salt, sugar, and Worcestershire sauce in a blender. Blend well.
  • In a saucepan, combine garlic mixture, chili sauce, catsup, vinegar and hot pepper sauce. Simmer 25 minutes, uncovered. Sauce will be thick and will thicken even more as it cools.
  • Place riblets in a large roasting pan. Pour sauce evenly over the ribs. Cover and bake 2 hours.
  • Preheat broiler or prepare a charcoal fire. Grill ribs for 6 to 8 minutes or broil for 3 to 4 minutes, turning them once and basting with sauce until they are browned and crusty. Charcoal grilling gives the most authentic flavor.
