INGREDIENTS

  • 3 egg yolks
  • 2 teaspoons lemon juice
  • 1 1/2 cups safflower oil
  • 1/2 cup olive oil
  • 1 dozen oil-packed anchovy fillets
  • 1 1/2 tablespoons fresh minced tarragon or 1 tablespoon dried
  • Salt to taste

DIRECTIONS

  • Combine egg yolks and lemon juice in a small bowl. Whisk together well. Begin adding safflower oil and olive oil drop by drop, whisking continuously, until mixture thickens and emulsifies. To make in a blender or food processor, blend together egg yolks and lemon juice.
  • With motor running, add oils drop by drop until mixture thickens and emulsifies.
  • Pound anchovies and their oil to a paste. Stir into mayonnaise along with tarragon. Add salt to taste.
