INGREDIENTS

  • 1 1/2 cups flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 egg
  • 2/3 cup milk
  • 1/4 cup butter or margarine (melted and cooled) or salad oil
  • 1/2 cup strawberry jam
  • For Cinnamon Streusel Topping:
  • 1/4 cup flour
  • 1/3 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons cold butter or margarine

DIRECTIONS

  • Preheat oven to 375° F. In a large bowl stir together flour, sugar, baking powder, salt, and nutmeg. In a medium bowl beat egg with milk and melted butter. Add egg mixture to flour mixture, stirring until mixture is smooth.
  • Spread batter in a greased 8-inch springform pan. Spoon jam evenly over batter. Draw a knife through batter in several back-and-forth strokes to marble jam through it. Sprinkle evenly with Cinnamon Streusel Topping.
  • Bake until topping is well browned and wooden skewer inserted in center comes out clean (40 to 45 minutes).
  • Let stand about 5 minutes, then remove pan sides, cut into wedges, and serve warm or at room temperature.
