Spinach with Eggs Recipe

INGREDIENTS

• 3 tablespoons olive oil
• 1 clove garlic, finely chopped
• 2 lb spinach, washed and picked over
• salt, pepper, grated nutmeg
• 4 eggs
• 4 tablespoons cream
• 3/4 oz. breadcrumbs
• 3/4 oz. butter

DIRECTIONS

• Heat the oil in a pan and fry the garlic for 1 minute. Add the spinach, cover, and fry gently for 3 minutes. Season with salt, pepper and nutmeg.
• Beat the eggs and cream together and mix with the spinach.
• Grease an ovenproof dish and put the spinach mixture into it. Sprinkle on the breadcrumbs, and dot the top with butter.
• Bake at 425°F for 10 minutes. Remove from the oven and serve.
