Shrimp Scampi Recipe uses shrimp, lemon juice, butter, garlic, paprika, parsley flakes and Parmesan cheese in creating this delicious appetizer or main dish shrimp recipe.

INGREDIENTS

  • 1 lb. shrimp, peeled and deveined
  • 1/2 cup lemon juice
  • 3 Tbl. butter
  • 4 cloves garlic, minced
  • 1/4 tsp. paprika
  • 1/2 Tbl. parsley flakes, dried
  • Parmesan cheese (optional)

DIRECTIONS

  • Hint: shrimp cook very quickly. If over-cooked, shrimp become tough, tasteless and rubbery. If the cooking pan is not over-crowded and the shrimp are not piled, the shrimp will cook in approximately two minutes. Move the shrimp frequently while cooking, turning often.
  • Place a large sauce pan/skillet on medium heat. Add butter to melt. Once butter has melted, add garlic and cook. Stir frequently and do not allow to burn/turn dark brown.
  • Add lemon juice and stir to mix well. Add paprika and stir. Add parsley and stir. Allow mixture to come to temperature.
  • Add shrimp and stir well to coat shrimp with butter/lemon mixture. Move and turn shrimp frequently. Cook shrimp to attain a pinkish/orange color on shrimp. Once shrimp are pinkish/orange, cook for about 45 seconds more and quickly remove from skillet and place on serving platter. Pour sauce from skillet over shrimp. Sprinkle with Parmesan cheese if desired.
