INGREDIENTS

  • 1 clove garlic, minced
  • 1 tablespoon reduced-calorie margarine, melted
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 cups skim milk
  • 1 1/2 pounds round red potatoes, peeled and thinly sliced
  • 1/4 cup chopped onion
  • 1/4 cup chopped fresh parsley
  • Vegetable cooking spray

DIRECTIONS

  • Saute garlic in margarine in a small saucepan until tender. Stir in cornstarch, salt, and pepper.
  • Add milk, stirring well. Cook over medium heat, stirring constantly, 2 minutes or until mixture is thickened and bubbly. Remove sauce from heat, and set aside.
  • Arrange half each of potato, onion, and parsley in a 2-quart casserole coated with cooking spray. Top with half of sauce. Repeat layers with remaining potato, onion, parsley, and sauce.
  • Cover and bake at 350°F for 45 minutes, stirring once. Uncover and bake an additional 30 minutes or until potato is tender.
