INGREDIENTS

  • 2 6oz cans pink salmon
  • 1 egg
  • 3 green onions
  • 1/4 Cup plain bread crumbs
  • 1/4 Cup Parmesan cheese
  • 1 1/2 tsp lime juice
  • oil

DIRECTIONS

  • This recipe yields four nice sized patties, about 4 inches by 1/2 inch. Recommend Black Top canned salmon as it contains no skin or bones. Open cans and pour contents into colander to drain. Lightly break-up salmon just to verify no bones are present. When drained, place salmon into a mixing bowl.
  • Add 1 egg, beaten. Cut green onions into small circles and add to bowl. Add remaining ingredients. Gently mix to a doughy consistency.
  • Heat a griddle or heavy bottomed skillet on medium high. While griddle is heating, form salmon mixture into four patties about 3 inches by 1 inch.
  • When griddle is hot, add just enough oil to prevent patties from sticking but not enough to puddle. Place patties on griddle. Using an egg turner flatten all patties to a uniform height, about 1/2 inch, to ensure all patties cook evenly. Cook patties for about 7 minutes and then using turner, flip the patties and cook for another 7 minutes. Serve with cocktail or tartar sauce, if desired.
