INGREDIENTS

  • 1 pound Colby, jack, or mild Cheddar cheese, grated
  • 2 cans (2 1/4 oz each) sliced ripe olives
  • 1 onion, chopped

DIRECTIONS

  • Set aside 1 cup of the grated cheese.
  • Mix together olives and onion. Fill each enchilada by placing a handful of cheese in the center of the prepared tortilla. Top with a spoonful of the onion and olive mixture. Roll and proceed with the enchilada recipe of your choice.
  • Top the finished enchiladas with the 1 cup grated cheese and bake according to the recipe.
