INGREDIENTS

  • Quick Tomato Sauce (search recipes)
  • 1 pound ground beef
  • 1/2 cup uncooked rice
  • 1/4 cup minced onion
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • Porcupine Beef Balls with Mushrooms:
  • 1 1/4 cups (10 1/2 - to 11-ounce can) condensed cream of mushroom soup
  • 1 cup water
  • Porcupine Beef Balls with Celery:
  • 1/2 teaspoon celery salt
  • 1 1/4 cups (10 1/2 - to 11-ounce can) condensed cream of celery soup
  • 1 cup water

DIRECTIONS

  • Lightly grease a 2 1/2-quart casserole having a tight-fitting, cover. Prepare and set aside Quick Tomato Sauce, adding 1/2 cup water. Meanwhile, combine beef, rice, onion and a mixture of salt and pepper and mix lightly.
  • Shape into 1 1/2-inch balls and put in casserole. Pour tomato sauce over meat balls. Cover and bake at 350°F about 1 hour, or until visible rice is tender when pressed lightly between fingers. To serve, garnish with parsley.
  • Porcupine Beef Balls with Mushrooms: Follow recipe for Porcupine Beef Balls. Substitute a mixture of 1 1/4 cups (10 1/2 - to 11-ounce can) condensed cream of mushroom soup and 1 cup water for the Quick Tomato Sauce.
  • Porcupine Beef Balls with Celery: Follow recipe for Porcupine Beef Balls. Add 1/2 teaspoon celery salt with the seasonings in beef balls. Substitute a mixture of 1 1/2 cups (10 1/2 - to 11-ounce can) condensed cream of celery soup and 1 cup water for the Quick Tomato Sauce.
